The Cave

Kanava was a working cave winery two hundred years ago, cut by hand into the volcanic rock, and you can still feel all of it. The conversion kept everything that mattered - the vaulted chambers, the cavities and curves, the imprints of two centuries of winemaking - and added only what was needed to live well: a calm, considered interior, soft light, and small recesses in the walls that still hold local wine, as they always have. The thick stone keeps it naturally cool and quiet, the kind of silence that lets you sleep deeply, read slowly, and let the days lose their edges.

The Setting

Kanava sits on the edge of Mesaria, a traditional village in the green centre of the island that most visitors never reach, surrounded by the vineyards that have shaped Santorini for thousands of years. Climb to the rooftop for the heated jacuzzi, the morning coffee, the sunrise and the long view over the vines.
